Seaweed / Sea Vegetables

UNH Cooperative Extension and NH Sea Grant are working to help people in NH understand: 
1) the benefits of and possibilities offered by the use of seaweeds in cooking
2) the way in which seaweeds can be used in aquaculture

Seaweed as Food
UNH Cooperative Extension has partnered with NH Sea Grant, Maine Sea Grant and Stages at One Washington (Dover, NH) to develop events for people to learn how to handle, identify and prepare several different species of sea vegetables. Recent workshops have featured an introduction to the types of seaweeds found on the NH coast and demonstrations of how to create creative and healthy dishes using sea vegetables (what seaweed is called once prepared) as an ingredient.

Seaweed Aquaculture
Seaweed is being investigated by UNH researchers as a stand-alone aquaculture crop, as well as, in use as one component of a multi-tropic approach (which includes seaweed, kelp and trout raised together). Not only can seaweed aquaculture provide sea vegetables for use in cooking, it has the potential to reduce the impacts of nutrients on the waters in which it is grown.
