Directions:
Prepare all your salad ingredients by washing and slicing or dicing the cucumbers, tomatoes and red onion. Place into a bowl. Top with olives and feta cheese.
In a small bowl, add olive oil, vinegar and mustard. Whisk together until all ingredients come together. Add fresh herbs and pepper, mix to combine. Pour over salad ingredients and toss to combine.
Tips:
You could add chickpeas, cooked orzo pasta or quinoa to make it more of a meal.
Spread some hummus on a tortilla wrap; add some fresh spinach leaves, top with the cucumber Mediterranean Salad and roll up for a healthy and delicious lunch.
