Enjoy these delicious blue gems of summer

Now is the time to visit your local farmers market or farm stand to buy freshly picked blueberries. These small blue gems are sweet and delicious and can be used in many recipes. Wash a handful and put in your cereal or yogurt, top a salad or just pop them in your mouth. Try the recipe below to make delicious pancakes.

Blueberry Wheat Germ Pancakes

Serves: 5

Serving size: 2 pancakes

Ingredients:

1 cup all-purpose flour
1 ½ tsp. baking powder
1 Tbsp. sugar
½ cup fresh blueberries
½ cup wheat germ
1 ¼ cups milk, nonfat
2 Tbsp. vegetable oil
½ cup cottage cheese, nonfat
cooking spray

Directions:

  1. Sift together flour, baking powder and sugar. Add wheat germ.
  2. Combine milk and oil and stir into dry ingredients until just moistened.
  3. Stir in cottage cheese until mixture is lumpy.
  4. Stir in blueberries.
  5. Spray griddle or pan with cooking oil and heat.
  6. Drop a spoonful of batter on hot griddle. Cook until golden brown, turning once.
  7. Refrigerate leftover pancakes and serve another day.
