Crisp, crunchy delicious mouthwatering cucumbers

There is nothing like the taste and smell of fresh cucumbers. The three main types of cucumbers are slicing, pickling and seedless. Always remember to wash your hands before preparing food. Wash cucumbers under running water; use a clean vegetables brush to help remove dirt.

Cucumber Salad - Mediterranean Style

Serves: 8

Serving size: 3/4 cup

Salad ingredients:

4 cups cucumbers, sliced
1 cup tomaotes, diced
1/2 cup red onion, thinly sliced
1 4-oz. can black olives, sliced or Kalamata olives, sliced
1/2 cup feta cheese, crumbled

Dressing ingredients:

1/4 cup olive oil
2 Tbsp. vinegar white or apple cider
1 tsp. mustard
1/4 cup fresh herbs mint, dill, parsley or any combination
pepper to taste

Directions:

Prepare all your salad ingredients by washing and slicing or dicing the cucumbers, tomatoes and red onion. Place into a bowl. Top with olives and feta cheese.

In a small bowl, add olive oil, vinegar and mustard. Whisk together until all ingredients come together. Add fresh herbs and pepper, mix to combine. Pour over salad ingredients and toss to combine.

Tips:

You could add chickpeas, cooked orzo pasta or quinoa to make it more of a meal.

Spread some hummus on a tortilla wrap; add some fresh spinach leaves, top with the cucumber Mediterranean Salad and roll up for a healthy and delicious lunch.
