A Fabulous Broccoli Recipe
When you go to a farmers market in late June, you will likely find fresh broccoli for sale. When you purchase broccoli at the farmers market look for blueish-green florets that are tightly closed. Broccoli can be stored in the refrigerator for up to five days. Broccoli makes a great addition to many dishes like the stir-fry recipe below, add it to salads, use it in soups, wash and eat it raw with dip.
Broccoli - Red Pepper Stir-fry
Servings: 4 Serving Size: 1 cup
Ingredients:
2 teaspoons olive oil
2 large garlic cloves, chopped
3 cups broccoli
2 Tablespoons water
1 large onion, sliced
1 medium red bell pepper, sliced
Directions:

Heat a skillet over high heat, add olive oil and chopped garlic.

Add washed and trimmed broccoli, cook until broccoli becomes a bright green color.

Turn heat to medium, add water, cover and let steam for 2 minutes.

Turn heat to high, add onion and red pepper, cook another 2 to 3 mintues until onion and peppers are tender.
