A Fabulous Pea Recipe

When you go to the farmers market in the summer, you will likely find crisp bright green pea pods with delicious peas inside.

Pea Hummus

Ingredients:

1 ½ cups fresh peas, frozen peas work well too when fresh are not in season

½ cup parsley, chopped

¼ cup warm water

2 Tablespoons lemon juice

½ cup tahini

½ teaspoon kosher salt

2 Tablespoons extra virgin olive oil

2 garlic cloves, chopped

Directions:

  1. Place all ingredients in order given into a blender.
  2. Blend until smooth.
  3. Pour into a small bowl and serve with fresh baby carrots.

You could serve with other fresh vegetables like various colored pepper slices, broccoli florets, cauliflower, celery sticks and even cherry or grape tomatoes. Why not create a rainbow of colors and use a mixture of vegetables for dipping into the pea hummus.
